Japan's Kirin Brewery Co. has developed a gene test that provides an efficient way of distinguishing different strains of brewer's yeast. This ability will help the firm manage quality control and aid in the development of new beer products.
There are thousands of different strains of brewer's yeast, including top-fermenting yeast used for brewing ales and bottom-fermenting yeast used for brewing lagers. Every strain has its own characteristics that affect flavor and other factors.
