Ingredients: (Portions for a 5 gallon batch)
Grain 3.3 lbs.  Malt Syrup, Dark (USA)  
Grain 1 lbs.  Honey  
Grain 3.3 lbs.  Malt syrup, Light (USA)  
Hops 1 oz.  Perle   (Pellets% AA) Boil time 45 min.
Miscellaneous Ingredient 0.25 oz  Nutmeg  
Miscellaneous Ingredient 3 sticks  Cinnamon  
Yeast 1 oz.  White Labs English Ale (WLP002)  Yeast   (Ideal ferm. temp: 65-68°F)
Directions:
Spices should be:
1/4 tsp nutmeg
4 tsp vanilla extract
3 tbsp cinnamon powder
4 tsp hazelnut extract

Add honey and spices for last 15 minutes of the boil. May want to use even less nutmeg. It tends to stand out.
Primary Fermentor:   8 days  Secondary  1 days  In Bottles:   4 weeks
